Topic Description:

What is a locavore? Through hands-on experiences, films, and intensive readings, we will seek to understand the roles of urban farming and locavorism as alternatives to conventional eating in the United States today. Through visits to farmers markets, community gardens, farm-to-table restaurants, and an exploration of the arts of cheese making and preserving, we will learn to sustain ourselves locally as we explore the vast resources that make the locavore lifestyle attainable in the Roanoke Valley. As a capstone to this course, we will become agritourists, traveling to work and reflect upon our experiences at a farmstay in the southeastern United States.
